Abstract

The background of this research was to empower the preservation of Papais Cake as a traditional Cirebon cake. Cirebon City is one of the cities in Indonesia which is strategi­cally located at the east end of the north coast of West Java. Papais cake is a traditional Cirebon cake made from rice flour, sticky rice flour, sugar, coconut and wrapped in banana leaves. There are 2 types of Papais in Cirebon namely Bodis Papais and Monyong Papais. Problem formulation consists of: (1) How is the existence of Papais Cakes in Cirebon traditional market? (2) What is the effort to preserve Papais Cake as Cirebon traditional cake? The purpose of this research is(1) To find out how the existence of Papais Cakes in Cirebon traditional markets (2). To find out how to maintain Papais Cake as a traditional Cirebon cake. Research methods and data collection techniques used in this final paper are (1) Descriptive method (2) Data collection techniques using interviews (3) observation (4) literature study. Place and Time of the study: (1) observations made in several markets in Cirebon were held on November 28-30, 2019. (2) interviews were conducted in June 2020 via telephone. now papais cake can be found in several traditional markets in Cirebon and at traditional ceremonies in Cirebon. the role of the Cirebon city government is needed to be more proactive in preserving traditional foods, especially papais cakes in the present era which are starting to disappear along with the times.
